Panel replacement

My trike is at my home. I plan to make some modifications on it while my hand/arm is still in cast. The modification would be as followings: replacing fuel filter with Racor fuel filter, install muffler clamps to replace springs, add fuel sending unit/fuel gauge, do some body paint, etc....
there is an instrumental panel. I like to replace the panel to make room for fuel gauge. There are 2 things that I never knew what the push button and toggle switch are for??? I plan to replace the egt and cht gauge.
What kind of material can I use for the panel????
